Bacon Wrapped Dates

Ingredients

  • 20 Medjool dates
  • 3 ounces Bleu d’ Avergne cheese, cut into strips
  • 1 tablespoon, chopped parsley
  • 10 Bacon slices cut in half lengthwise
  • Pistachios

 

Directions:

 

Preheat oven to 375 degrees.

For the dates:  Carefully slice the date down one side and remove the pit. Do not cut in half, the date should still be attached. Sprinkle in some chopped parsley to each date, then fill with the Bleu d’Auvergne cheese strip, and close. Repeat this for all of the remaining dates.

Take a strip of prepared bacon. Wrap it around the date and secure with toothpick. Bake on parchment covered baking sheet for about 15-20 minutes, until bacon is crispy.

Transfer to a platter and serve warm. Enjoy!
